Happy Monday everybody! I hope you all are ready to chow down on today’s blog post. With winter fast approaching, I have been experimenting in the kitchen with some warm and hearty meals that satisfy the taste buds, not to mention the soul. After all, who doesn’t love comfort food? Today, I wanted to reveal my very own recipe that blends the sweet, the savory, and the spicy all on one plate. Grab a fork and dig into my curry coconut pumpkin chicken!
Curry Coconut Pumpkin Chicken
Ingredients
1 Whole Pastured Chicken
1 cup Organic Pumpkin
1/3 cup Organic Coconut Cream
2 tsp Cinnamon
2 tsp Curry Powder
salt and pepper to taste
Directions
Rub chicken with cinnamon, curry powder, salt and pepper and roast for 5 hours on high in a slow cooker. The slow cooker method allows the chicken to become moist and juicy and you don’t even need to add water to the crock pot. The chicken will just turn out like a curry rotisserie style chicken, which is beyond delicious. When the chicken is almost done (say within 15 minutes of last hour), prepare the pumpkin puree. In a separate saucepan, mix the coconut cream and pumpkin together an saute it until it comes out into a thick, almost pudding like consistency. I should note, you can add additional spices as listed above to this mix as well for added flavor.
Once everything is heated up and ready to go, it’s time to plate it all together. Just pour out all the pumpkin into the bottom of a plate/bowl and add the chicken piece of your choice on top. Feel free to even pour some of the pumpkin purree over the chicken itself so it can soak up all the pumpkin it can. You will end up with something that looks like this!
If you haven’t started drooling already, you most certainly will find yourself drooling now! NO worries though, as you all now have this recipe and can make this dish at home for yourself! Please keep in mind that this recipe is really only made for one person, but there will obviously be left over chicken for future use. Please feel free to adjust the recipe accordingly if you are feeding a larger group of people. Enjoy!
