Fudgy, Guilt-Free Brownie Powerballs

I’m back! While we’ve been hard at work launching some exciting things here at Primal Fitness Pittsburgh, we have not forgotten about your foodie needs and desires. Let’s start again strong this time with an easy-peasy chocolate recipe.

These little balls of goodness are the ideal snack post-workout, late night, or well… whenever. Just try not to eat the whole batch at once because y’know what they say, “Moderation is key.” Psh. Go ahead.

These powerballs won’t have the winning numbers, but they are gluten-free, refined sugar free, paleo, vegan, and you get the gist. They’re HEALTHY. That’s what we like around here. They’re full of healthy fats, slow carbs for quick energy before or after you exercise, and naturally sweet dates to soothe your aching sweet tooth.

Fudgy, Guilt-Free Brownie Powerballs
Serves: 12Ingredients:

3/4 cup soaked cashews
7-8 soft, pitted medjool dates
2 tbsp. raw cacao powder (or cocoa powder)
1-2 tbsp. grass-fed gelatin (optional)
3 tbsp. chia seeds
1/4 cup melted coconut oil

Instructions:

Remove pits from the dates. Soak cashews and dates if you’d like for 3-6 hours to soften and remove any anti-nutrients found in nuts. When the nuts are ready, melt some coconut oil and whisk in the gelatin so it doesn’t quickly gel up; it just needs some hot liquid. When the coconut oil is soft, add all ingredients to a food processor. Process until the “brownie batter” is formed. Press into bite sized balls and refrigerate. After about a half an hour, they will be ready to enjoy. Store in the fridge or freezer if you can keep them for longer than a few days.

topped a luscious acai bowl with a couple of chopped up brownie bites for breakfast. This was a nourishing way to start the day. Doesn’t hurt that it’s pretty! I simply blended banana, acai berry powder, almond milk, and frozen berries. I also added a bit of coconut on top which is never a bad idea.
