Hey everyone! It’s Janelle again bringing you some fun eats from the lovely city of Pittsburgh. The fall season is quickly approaching (or possibly already here given the weather in the Burgh lately) and yours truly has been inspired to create a fun recipe to celebrate the fall. I haven’t posted a recipe on this blog for quite some time now, so I decided to give you all a tasty treat on primalburgher.com today! I’ve been super busy this week prepping for HKC Pittsburgh, so I’ll keep this post short, simply, and sweet.
Yep! This is a nice little sweet treat for you all today. Check out my recipe for my Pumpkin Coconut Parfait.
1 Cup Canned Pumpkin (I use the Organic Farmers Market Brand)
1/3 Cup Coconut Milk(I use the Organic Thai Kitchen Brand)
1 tsp cloves
1 tsp pumpkin pie spice
1 tsp cinnamon
1-2 tsp Organic Raw Honey
Chopped walnuts (optional)
Directions: Place coconut milk can in your refrigerator overnight to make a thick, coconut pudding. See my YouTube video here for more information. Once the coconut pudding is ready to go, you’re in for the final few steps. Take your canned pumpkin and mix in the cloves, cinnamon and pumpkin pie spice in a small mixing bowl. Layer 1/2 cup of the pumpkin mix into a parfait cup. Then, layer 1/3 cup of the coconut pudding on top of the pumpkin. Layer the final 1/2 of pumpkin on top of the coconut pudding. Add some chopped walnuts if you desire and drizzle the honey on top of it all. Might I say, this is simply DIVINE! It’s a perfect fall treat that will have you enjoying your life with every bite. GUARANTEED!
