Happy Monday to all of you! I hope you had a great weekend and are ready to start the week off right! I am gearing up for some serious blogging this week and wanted to start off the adventure with a fun recipe a friend of mine sent me over the weekend. Get excited! This is an interesting primal recipe that is hands down delicious!
While I normally munch on some tasty burgers of Beyond Organic, a friend of mine came up with a more vegetarian friendly version of my burger recipe. Honestly, I normally avoid pre-made veggie burgers as they tend to be filled with not so fun soy products, but this particular burger is soy free. Out of curiosity I tried this burger on for size and I must say, it gets my primal seal of approval. If you are looking for a soy free veggie burger to switch things up in your primal kitchen, try this zucchini burger I have featured below. I guarantee you will love it! Please note,this is an “almost vegetarian burger” because bacon is used in the recipe. For all my vegetarian friends out there, you can make your necessary substitutions as needed.
Primal Zucchini Veggie Burger
Ingredients
1 large grated zucchini with the water squeezed out of it
1 cup of almond flower (more if the zucchini is still really moist)
1 beaten egg
1 table-spoon of hot sauce
garlic powder, seasoned salt, black pepper and cayenne pepper to taste.
1 ounce Raw Cheddar Cheese (I use Beyond Organic Raw Cheddar)
Directions
Mix everything up in a bowl and take large spoonfuls and fry in a pan. You will use roughly one inch of bacon fat as the cooking oil and be sure to fry each side until brown. Top it all off with the raw cheddar cheese once fried up. Be sure to use a cast iron skillet/dutch oven for this. An additional option is to preheat your oven to 350 and when your burgers are fried up just a tad, you can add the cheese on top and bake them in the oven until the cheese melts.
